Most powdered scrambled egg mixes and powdered eggs on the market today contain artificial flavors or unhealthy chemical preservatives that make them less than ideal. So, I did a bit of research and discovered that I could take the eggs outside of the shell and freeze them in covered ice cube trays, pop them out and toss them into a ziplock freezer bag for later.
If you like these silicone trays that I bought, you can purchase your own here. I haven’t found any problems with these so I’d recommend them to anyone interested in preserving eggs for future meals. In theory, you should be able to thaw the cubes and use them for quiche or in baking dishes with no problems. There have been egg shortages lately, so be sure to find some way of preserving eggs for a good source of protein for your family.
